“When I first moved to North Carolina, my neighbor… raved about Brigs breakfast, especially their pumpkin pancakes.  It has been 10 years since I first tried these pancakes and it is tradition for me to visit them every year in October.  Due to their popularity, these pancakes are featured in October and November.  Not only are you mesmerized by the sweet aromas of these pumpkin pancakes, but they are also incredibly fluffy and delicious, of course.  In my opinion, very little syrup is needed for these delicious hot cakes that are topped with whipped cream.
